Where there's smoke, there's mezcal.
Confession: I used to hate mezcal. In an effort to acclimate myself to it, I started subbing in mezcal in tequila-based drinks little by little. So if a recipe called for 2 oz tequila (or mezcal), I’d use 1 oz blanco tequila and 1 oz mezcal. Happy to say it worked and I really enjoy mezcal now, so if you're on the fence about it, give this method a try.
This is one of my go-to cocktails when I'm in the mood for something refreshing but still packed with layers of flavor.
- 1.25 oz Mezcal (or Tequila, per the original recipe)
- .75 oz pineapple juice
- .5 oz lime juice
- 1 barspoon Green Chartreuese

Combine all ingredients in a shaker with ice, shake. Fine strain into a collins glass with cube ice. Add a straw and garnish with a pineapple frond, grilled pineapple chunk and Luxardo cherry for a nice mid-drink snack. (pro tip: don't eat the pineapple frond)
